In addition to his expertise in cellar management, staff training, menu development and wine buying, Daniel provides one-on-one consulting services for people who want advice and help on how to navigate their favorite wine shop so they can feel confident that they a purchasing a wine that they like without having to guess.

How did you first fall in love with wine?
On a consumer level, I fell in love pretty quickly with wine just because it is so DANG delicious! As a wine professional I re-fell in love with wine when I could connect the dots between what was in the glass with how/where the wine was made in addition to the history involved with any particular wine or region. Now when I drink wine, I feel like I'm drinking history. Every glass of wine has a story and it is a story of the human condition. Wine is a bridge that connects people and creates a since of community and friendship; that reason alone is why I created GUSTO and is still the biggest reason why my love affair with the sauce will never end.

Do Millenials have different wine palates than their elders?
I don't necessarily think that Generation Y (Millennials) have a different palate that their elders but I do think that Millennials have a more sophisticated palate at a younger age compared to older generations. In the Unites States our wine culture really didn't start until after 1964, which means after WWI, WWII and Prohibition. It really wasn't until the 80's & 90's that the wine industry started to grow in leaps and bounds not only from a production point of view but also from the public's awareness of wine in general terms and in more recent years the affects that wine has on our health. I think the combination of increased production volumes and the marketing push for the wine industry in the last 25 years in combination with the health benefits has caused younger drinkers to choose wine before other libations and as result they begin the process of diversifying their palates a lot earlier than people born prior to 1980.

What do you think is the best value wine priced under $15?
For me there isn't just one wine priced under $15 that is a great value, there are tons. That being said if your looking for value the regions you should be looking at are Loire Valley, Rioja, Germany, SW France, Southern Italy (South of Naples) including Sardinia and Sicily and South America.

What wines would you suggest for BBQ? Jerk Chicken? Sushi?
BBQ- Zinfandel or Rieslings
Jerk Chicken- Chenin Blanc, Viognier, Syrah from the Rhone Valley, Grenache from Spain
Sushi- Depends on the actual fish but for red wines Beaujolais and Cabernet Franc. For white wines Sparkling wines, Sauvignon Blanc, Pinot Grigio, Rieslings and Dry Rose'

This September 9-11, Hampton, Virginia will once again welcome an estimated 200,000 fun seekers and festival attendees to the 29th annual Hampton Bay Days.

The free event, will showcase music by national recording artists, an impressive fireworks display, and for the first time ever, the Inaugural Hampton Bay Days BBQ Challenge!

The competition, governed by the rules of the Kansas City Barbeque Society and Hampton Bay Days, will take place on Saturday, September 10. Limited to 25 entries, each team participating will need to submit entries into four categories (to be considered for Grand Champion): beef brisket, pork ribs (loin or spare), pork (shoulder, butt, or picnic), and poultry.

Set up will begin at 11:00 a.m. on Friday, September 9, with the judging to begin at noon on Saturday, September 10. The awards ceremony will take place at 3:00 p.m. on Saturday, September 10.

Sherry is traditonally served in a small stemmed glass with a narrow tulip-shape body.

Pour your chilled sherry into a glass until its three-quarters full.

The reason most fine sherry's (manzanilla or fino) come in half bottles is, in Spain an open bottle is kept no longer than a single day to perserve freshness.

BTW: The so called cooking "sherry" found in the supermarket is not really sherry. It is a cheap American wine heated up to give it a baked, caramel flavor and then salt is added to it.

Aging Requirements For Rioja

Puree thawed frozen strawberries. Blend strawberry puree, dark rum, coconut milk, pineapple juice, fresh lime juice, and crushed ice in a blender until smooth. Pour Hpnotiq into a glass, top with 2 to 4 tablespoons of the strawberry mixture.

Vinho Verde literally means green wine. The green refers not to the wine's color but that it's a young wine meant to be drunk soon after it is made. Which is why you don't often see a vintage date on bottles of Vinho Verde.

Vinho Verde is a low alcohol wine with a touch of bubbles. The wine's slight fizzyness comes from a dose of carbon dioxide which is added just before bottling. Vinho Verde is very fresh, due its natural acidity, with fruity and floral aromas that depend on the blend of grapes.

The Minho region of Portugal's far northwest is where most Vinho Verde is made.

Beat The Heat With These Fablous White Wines

It has been hotter than Hades in Austin, TX so my usual red wine drinking has taken a backseat to lighter fare to help me beat the heat. I am generally not fan of white wines. They are often too oaky or too sweet to my palette.

I have managed to find a few choice bottles of white wines that are neither oaky or sweet and fall beneath $15 per bottle, making them excellent pairings for both your Summer meals and pocketbook.

My Top Three Favorites...
Famega Vinho Verde 2009. Vino Verde is a light, effervescent and refreshing wine produced in Portrugal that is great on it's own or with a grilled jerk chicken breast.

Starborough Sauvignon Blanc 2009 from Marlborough, New Zealand has a fantastic tropical fruit and a lemon zest flavor that pairs nicely with some grilled Talipia.

Clear Bottle Bay Pinot Grigio 2007 from California tastes more like an unoaked Chardonnay with flavors of green apple and a hit of pear than traditional Pinot Grigios. Priced at pocketbook friendly $3.99 this drinkable wine pairs nicely with spicy Indian food or Szechuan Chinese take out.

Tis The Season For A Watermelon Cocktail

Ingredients
3/4 cup of watermelon chunks, seeds removed
1 shot of rum (or more :-)
1 lime
3-4 mint sprigs
2 table spoons agave syrup
5-7 ice cubes

Instructions
Start by slicing your lime in half. Cut one half into wedges and place them in a cocktail shaker. Squeeze the juice from the other half. Add in the mint and the agave syrup. Bruise with a muddler or an ice tea spoon. Shake and set aside. In a blender combine the watermelon chunks, ice, and rum. Once your are finished, put the lime mixture into a large glass and top with the watermelon blend. Stir and drink up!

Sonoma is not all sprawling estates and elaborate châteaux. This summer, the winemakers of Eighth Street Wineries in Sonoma invite the public directly into their warehouse workspace to taste fine artisan wares.

On August 6th, 2011, from 11 a.m. to 4 p.m., the nine neighboring wineries will unite to for a semiannual Open House. New releases, library wines, barrel tastings, and bargains will be offered alongside gourmet food pairings.

Wine and food extravaganzas occur often in wine country, but are rarely hosted by such a committed group of winemakers--and never for such a bargain. The advance ticket price of $30 per person ($20 for wine club members, $35 at the door) includes tastings, pairings, and a souvenir wine glass. Guests park once and simply walk from winery to winery.

Chronic Ice, the nation’s first drink containing hemp, hopes make a splash using hip hop marketing tactics to reach the healthy beverage market. The refreshing health tea, made with organic sugar cane, a green and black tea blend, lemon essence, ascorbic acid and, of course, hemp seed extract, is in growing demand by health food and hemp enthusiasts. Little Wayne and Snoop Dogg have already tried it.

“People don’t get high drinking our tea, but they can get healthy,” said Tony Van Pelt, founder of Chronic Ice. “Although its name is a play on marijuana, Chronic Ice does not contain any cannabis or THC.”
